Researchers at Florida State University (Florida, USA) enrolled 160 women in post-menopausal women, and randomly assigned to each of them eating 2.7 ounces (75 g) of dried apples or prunes daily.
Blood tests were conducted several times a month month to measure the cardiovascular risk factors, including cholesterol levels. Three months after the beginning of the test, total cholesterol was reduced by 9%, while the 'LDL ("bad cholesterol") was reduced by 16% among subjects who consumed the dried apples.

After 6 and 12 months, total cholesterol was reduced by 13% and LDL cholesterol by 24% among those who ate dried apples.



The authors argue that "the consumption of 75 g of chopped apple (about two apples) can significantly reduce cholesterol levels after 3 months."
